Abstract

Starting from reports of laboratories of scientific investigations and of the industrial practice, it was carried out an examination of the normal behavior of the yeast Saccharomyces cerevisiae, and their incidence in the technological processes of production of alcohol for fermentation. Three particularities of behavior of this microorganism were compiled: The Pasteur, Crabtree and Custers effects. It was verified that the Pasteur effect has originated that in the aerobic process of reproduction of the yeast in the prefermentors of the stills of alcohol, the concentration of fermentable sugars is from 60% to 70% of that of the anaerobic alcoholic fermentation process. For Crabtree effect, in tolerating that the formation of 2% to 3% v/v of ethanol is normal in aerobic process, if it is by means of the recurrent reproduction of yeast in mother tanks, up to 4% alcohol. It also originated the development of biotechnologies of feeding of the limiting mash for pulses (fed-batch). For Custers effect the necessity of the employment of ammonium bifluoride or antibiotics, if in the mash fermented apparent 0,8% w/v or more than acidity; as well as their systematic operational employment when the yeast biomass is recycled to the industrial alcoholic fermentation for the Melle-Boinot process. It was specified that the knowledge of these characteristics of the yeast, on the part of the academics and producers; it is a necessity in the obtaining of the best results of technician-economic viability.
